Fresh and deliciously flavoured, this haddock with kiwi and fresh cheese in a verrine is a real delight.
A great starter for a nice meal.
You will need for 4
- 1 haddock fillet
- 3 kiwis
- 1 tbsp black sesame
- gomasio ( at your convenience)
- 3.5 oz / 100g fresh cheese
- 1 lime juice
- 2 tbsp argan oil (or olive if you do not have any argan oil)
- salt & pepper
Dice the haddock
Peal and dice the kiwis.
In a bowl, mix sesame seeds, gomasio and pepper
In another bowl, arrange the fresh cheese. Roll the fresh cheese in the mixture of sesame seeds, gomasio and pepper to coat it. Cover with a plastic film and put in the fridge while you finish the verrines.
In a bowl, put together the diced kiwis, the lime juice, the sliced haddock and the chopped chives. Season with pepper. Mix.
In the verrines, alternate kiwis/haddock and fresh cheese and drizzle with argan or olive oil.
Serve very fresh, enhance with gomasio
